My Favorite Breakfast

This is really simple but really good.  Simply take a slice of bread (any kind), toast it, spread it with mayo, and put some really great fresh garden tomatoes on it.  Sprinkle liberally with Kosher salt and freshly ground black pepper.  That’s it. 

Now, obviously, the key to this dish is great, and I mean great, tomatoes.  Don’t even think about trying to make this with those vapid, tasteless supermarket tomatoes.  It won’t be good.  I know it’s a little late in the season for this recipe but if you still have access to excellent tomatoes, give this a try.
