Jazz up that store-bought mayonnaise

A nice article on mayonnaise.  It reminded me of making crab and flounder cakes in North Carolina one summer.  (Isn’t a beach kitchen with bad tools and an empty larder to start the week, the best place for improvisation?)  After frying the cakes, it was obvious they needed a sauce.  What to do?  Easy, start with mayo and start adding.  I think I added capers, lemon juice, salt, pepper, and garlic.  I called it caper aioli and it was delicious.
