Mashed sweet potatoes with sherry

This recipe is a nice twist on mashed sweet potatoes:

Mashed Sweet Potatoes with Sherry

2 lbs sweet potatoes, peeled and cut into 3/4 inch cubes

4 T butter

2 T brown sugar

2 T sherry

salt and pepper to taste

Steam the sweet potatoes until tender.  Place into a mixing bowl and add the rest of the ingredients.  Mix thoroughly.  I use my stand mixer but a hand mixer would do just as well.  Taste and adjust any seasonings.  Depending on the sweetness of the potatoes, you may need to add additional brown sugar as well.  Serve.

The sherry in the dish adds a sophisticated sweetness that elevates it beyond your average side dish.  I say sophisticated because while this dish is sweet, the alcohol in the sherry cuts that sweetness while sharpening all of the other flavors in the dish.  I will definitely be making this again.
