Old-Fashioned Macaroni and Cheese

This is a classic recipe of Bridget Carns.  It is one of the creamiest and most satisfying mac and cheese recipes I have ever eaten.  I believe it came from a very old Betty Crocker cookbook.  Here’s the recipe:

Old-Fashioned Macaroni and Cheese

8 oz small shell macaroni

2 T grated onion

1/4 tsp pepper

3/4 pound shredded sharp cheddar cheese

2 1/2 T butter

2 1/2 T flour

1/2 tsp salt

1/4 tsp pepper

1/4 tsp dry mustrad

2 1/2 cups milk

1 T butter

Make white sauce:  Melt 2 1/2 T butter over low heat.  Blend in flour, salt, 1/4 tsp pepper, and dry mustard.  Cook until smooth and bubbly.  Remove from heat and stir in milk.  Heat to boiling, stirring constantly.  Boil and stir one minute.

Heat oven to 375 degrees.  Cook macaroni; place half of macaroni in ungreased 2-quart casserole.  Sprinkle with 1/2 of onion, 1/8 tsp pepper, and 1/2 of cheese.  Then repeat.  Pour 2 cups of white sauce over and dot with 1 T butter.  Cover and bake 30 minutes.  Uncover and bake 15 to 30 minutes longer.

    Thanks for posting this. This is the one my great-grandmother made every Thanksgiving when I was a kid, and we lost the cookbook. Thanks for preserving a tradition for my family!
