Brown Sugar Glazed Salmon with Spicy Cilantro Sauce

I’ve been trying to think of inventive ways to get Katelyn to eat fish.  This endeavor is quite important to me as 1)  she’ll eat fish much more readily than other meat (although she did take a bite of steak a few weeks back) and 2) fish is a great source of nutrition for her and the baby.  So, I wanted to find a foolproof way to get her to like salmon.  This is what I came up with:

Brown Sugar Glazed Salmon with Spicy Cilantro Sauce

1 lb salmon

3 T brown sugar

zest from one lemon

1 tsp kosher salt

1/4 tsp pepper

Spicy Cilantro Sauce (recipe follows)

Process brown sugar, lemon zest, salt and pepper together in a mini-chopper.  Rub over salmon and let sit and room temperature for 45 minutes.  Preheat your broiler.  Broil fish for 6-8 minutes or until it reaches your desired doneness.  Serve with Spicy Cilantro Sauce.

Spicy Cilantro Sauce

3 T olive oil

1 jalapeno

1 1/2 T soy sauce

1/2 T lime juice

1 small clove garlic

1/3 cup cilantro

Process all ingredients except cilantro in a mini-chopper until almost smooth.  Add cilantro and process to your desired consistency.

The result should be a dynamite sweet and spicy combination.  The broiled salmon should be succulent and have a sweet, crunchy crust.  The spicy cilantro sauce adds a little bit of heat and a lot of flavor.  What can I say, it’s delicious!

      Shame the OP dosnt check this id really love to know if he has anything else like this… AMAZING RECIPE!!! i was very iffy about trying this being noone else tried it .. but jeeeeezzzz i LOVE IT…. so did the last 11 girlfriends i cooked it for and my fiancee loves it too.. deffff 5***** recipe!!! i reccommmend anyone n everyone to try it even if u r not a fish person … you will be shocked
